Buhitos



When creating cupcakes, I pay a lot of attention to the visual aspects in order to make each product as unique and personalized as possible. For me, the whole process starts with inspiration. This time, my inspiration came from the cute animals in the forest. As you can see in the pictures, the cute little owl is my little protagonist. Before baking, I made some drawings of different types of owls and then developed them in Photoshop. Here you can see the final result: “Buhitos” – Little Owl Cupcakes, flavoured with chocolate and caramel! Hope you like them ♥
Carrot Cupcakes with Ginger and Cardamom
Carrot cupcakes are some of my definite favourites. I like that they are not too sweet and together with the cream cheese frosting they have a citrus creaminess that is delightful to eat. My recipe below is a bit healthier thanks to organic brown sugar that I used instead of white sugar and extra virgin olive oil instead of butter. The result is rich and moist, and the cupcakes are lightly spiced with cinnamon, cardamom y ginger. If you like, you can add nuts to the recipe to give them an extra crunch. I decorated mine with cream cheese frosting and pastel coloured sugar paste bows.


Carrot Cupcakes with Ginger and Cardamom (ca. 12 cupcakes)
- 3/4 cup brown sugar
- 1/2 cup olive oil
- 2 eggs
- 3/4 teaspoon vanilla extract
- 1 cup flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ginger
- 1/2 teaspoon cardamom
- 1 1/2 cups fresh grated carrots

Granny square cookies


Once I discovered the Granny Square Cookies, I really wanted to try them out myself. I love the idea of making things granny chic and original like these crochet-looking goodies! I started with baking square-shaped cookies and the next day I decorated them. As in the tutorial, I made the outline of the squares first and then the filling in ivory colour. When it was dry, I did little squares of three different colours starting from the middle. This really needs precision and time so you have to be patient, but seeing the result makes it so worth it! And they taste very good too…:)
